Traditional Turkish Fig Pudding - For Vegans

My twist on the Traditional Turkish fig pudding. Suitable for Vegans.


Ingredients

1 cup of plain Soya Milk (clean soya milk)

4 dry Figs - sugar and preservatives free (you can use 3 figs, but mine were very small so I used 4).

Cinnamon, a few Walnuts and Maple Syrup.


Method

Soak the dry figs in boiling water for 30 minutes. Then rinse well and remove the stems and chop them up in smaller pieces. 

Warm up the soya milk to about 46 celsius (you can use your little finger, if it burns a bit then it's good).

Add the figs, and with a hand blender, pulse it for a few seconds until the figs are mashed.

Don't over do it as it will foam the milk too much. 

Place this mixture in a serving dish.

I got two small desserts from one cup of milk, but you can use this as a single serving.

This is quite sweet, so for me this is 2 servings.

Place them in the oven and cover with a cloth.

Turn the oven to 50 celsius for 10 minutes then switch it off. Leave the pudding to rest in the oven or a warm place for about 2 hours.

After that, chill well in the refrigerator (overnight is the best) and serve it with cinnamon, a few walnuts and maple syrup.
