This is my Oil Free Knäckerbrot recipe.
It's totally oil free, but has seeds, so it's a bit calorie dense, otherwise very healthy.
Ingredients
1 cup cornmeal
1/4 cup sesame seeds
1/4 cup whole flex seeds, then grinded in coffee grounder (I used yellow flex)
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 tsp sea salt (optional)
1/2 tsp dry oregano (optional but I love oregano)
1 tsp whole cumin or caraway seeds
1 1/2 cup boiling water (maybe a bit more)
Optional: any other spice, I used black pepper, also garlic powder, which takes them to another level.
PS. The size of my pan is 42cm by 32cm.
Method
Mix all the dry ingredients, then add boiling water. Make a nice dough. Spread it thinly on parchment paper ( it's not easy, so take your time).
I used a silicone spatula by the way.
Cut with a pizza or pasta cutter. I used a "satara" (it's on the picture) as it's more easier.
Then bake it on 150 Celsius for about 50-60 min depending on your oven and once they are cooled off enjoy.
You can also sprinkle them on salad, eat with salsa etc.
I keep them in a jar for freshness.
